I realize you have to deal with what you have to deal with.   I just
wanted to push back on the idea that everyone was powerless.

I suspect you are just going to have to put up with spam and sort it out
then.

You could seed a database with the email customers enter when ordering
and have a plugin that does welcomelist_dkim on those.

Given how gmail conducts itself, I think you have to use dkim and
basically treat known senders as an exception to a presumption of a
fairly high likelihood of being spam.
