It depends on what the SPF records for the domains using your relay
publish.  If they really want to use your relay, they should publish
it in their SPF record.  However...

Yes, SRS will make your relay domain responsible for any mail you relay.
SRS changes MAIL FROM.  It does *not* change the "From:" header field
displayed by email clients.
