Could you tell your PHP version, local PHP mbstring extension settings for
SquirrelMail, translation used by user, default SquirrelMail charset, name
and version of used IMAP server?

Could you show headers of broken emails? Not just "=?windows-1252?Q?" part.
Whole subject header.

Could you check webserver error logs.
