This info is stored in accountrc in <HomeDir>\.sylpheed .
You may also take a look into sylpheedrc (global config)
and change "check_on_startup=" to 0.

You need not fear that: All settings and data will not be
removed by Sylpheed (or the installer/uninstaller).


Btw.: All the config files are plain text and (I hope) self
explanatory. Tasks like setting up filters are sometimes easier
with a texteditor. Who dares wins :)
