Font customization

I've just started using Zoe (as POP and SMTP server for about 3 
accounts) and find it nifty.  However, I really want to change the fonts 
it uses, and with more control than just the generic families available.

How would I add some custom options?  I'm not scared of editing the code 
a bit, but I don't know Java at all.
