You have a couple of options:

(1) Most browser allow you to customize their font preferences.

(2) You can change the application Stylesheet.txt to your likening.  
Look for variables named {v:*Font}:

Stylesheet.txt?view=markup

The file is located in the main ZOE.jar. To extract it, unzip the jar  
and copy Stylesheet.txt to the directory where ZOE.jar is located. Now  
your version will take precedence over the one in the jar.

(3) You can always change the source code. It's pretty straightforward.
