So its a communal thing for the Orthodox as opposed to an individual one? IOW
everyone is supposed to do the same fast?

Well, it's only the wine/beer that we get on weekends. We still have to abstain
from meat, fish and dairy products (with the exception of Palm Sunday and the
Feast of the Annunciation, i.e. March 25, when we get fish but not meat or dairy
products).

Oh, the joy I remember seeing on that one deacon's face, as he bit into a
cheeseburger during the feast that began right after the Paschal service in the
wee hours of Saturday night / Sunday morning. I wasn't Orthodox at the time,
but I am now, and I "get" his joy now. :)
