Hi Steve,
   I had a chance to work with an evaluation copy of Cakewalk's P5v2
and I really liked it. Its synths (DXI, RTAS, or VSTi) I found
interesting, but not super powerful in dynamic sound.  There are
others who might recommend Ableton Live.  As with synths, opinions run
the range.  Frankly, however, I think these mainstream utilities are
pricey.  There are a few low priced one's (eg. nTrack) and some
freebies, but they do not come with soft synths inside. 
   It comes down to the problem of hardware vs software and user
interface you prefer - computer, monitor, tons of visuals and mouse,
vs the synth workstation with button, key, alpha wheel, etc. access.
   I prefer hardware, but, to be truthful, I'm not the best source of
advice in these matters.  My forte is sound design.  Someone else may
have better ideas.
