I use Phatnoise Music Manager for my MP3 collection.. It does let you
change the tags of your collections both before you burn them, and
afterwards.  It's actually quite a good bit of s/w. (Their H/W is damn
good too if you want a MP3 device for your Audi / BMW / VW/ Lincoln &
some Fords plus most Sony headunits) It speaks to you even :)

The tags are governed by the ID3 de facto standard.  ID3 version 1 has
a predefined list of genres from which you must choose; I think
version 1.1 extended that list.  (And yeah the list is pretty bad.) In
ID3 version 2 you can use the ID3v1 genres or use your own.

I've never had a problem with the Slimp3 displaying user-defined ID3v2
genres.  You just need a program that writes ID3v2 tags.  I don't know
anything about easytag or other non-Unix tag editors though.
