It won't be immediate, since some resolvers will still have the IP
addresses of your old name servers cached.  Make the change, wait a
few days for the traffic to your old servers to die off, then get rid
of the old servers.  You'll have to make the change on the old servers
as well as on the new servers and parents.

If you change the NS names, there's a more complicated procedure to
ensure you don't become invisible to some old buggy BIND resolvers:

Sounds like you have glueless delegations.  You might want to
reconsider that.
