NoCat or NoCatAuth? for Cafe'

I'm going to set up a "free" wireless AP for a friends cafe. My netowrking / wifi knowledge is so/so. I'm a DBA so i let the networking guys take care of things :). I want to set up a Cafe that brings up a splash screen and an EULA (are there any good ones i can paste in?) I'm not to worried about squatters as there are no outlets in the front of the store, so i'll give laptop users an hour before their battery dies. Is it possible just have a password printed on the my receipt and when the splash screen comes up they type it in. I'll change the pass like once a week to keep people honest. And can i turn off the wifi when the store is closed? What ports do you say to block? 25 for mail anything else? Can this just be done through the router only? anyone try this with VMWARE?
