One answer, though not one that'll help you with historical data, would be
to set up recurring Scheduled Outages. Then, you'd just stop polling
outside of that window, and any outages in that time would disappear from
your report.

But, the major issue then would be that, if the app went down at 4:55pm on
a Friday, and came up 10 minutes later, it would look like a 2+ day long
outage, because it wouldn't "clear" until the scheduled outage window
ended...

You may be better off diving deep into the nitty gritty of the Jasper
Reports engine; you should be able to tweak the (already complicated) SQL
query there to just exclude outages occurring outside of normal business
hours...
