you can put this into your shell's setup (eg ~/.bashrc or ~/.zshrc):
  export NNTPSERVER=my.news.server

then again i have put this into my ~/.slrnrc:
  include       .slrn/server      % Servers <-> Newsrc Files

and included with this is my .slrn/server:
  server news.gmane.org              .newsrc.gmane.org             % 2004-06-01
  server news.tugraz.at              .newsrc.tugraz.at             % 2004-07-19
  server news.vr.in-berlin.de        .newsrc.news.vr.in-berlin.de  % 2006-07-31
