I would have to say whatever apps you chose to teach should be
cross-platform, sure some people might be running linux and they will
benefit from the class, but alot will be running windows and they wont
want to move to linux to learn an officesuite. Mozilla is a good choice,
so is opera.
stick with apps on the gnuwin cd's and you guarantee wide acceptance and
higher enrollment which means you could do it again next semester. Here
in the bay area they are cutting alot of computer classes cause more
people are taking business classes and such that is why i make that
point.
btw, i would love to take the advanced gimp and 3dmodeling classes
myself. I love gimp and am pretty good at it or am disillusioned enough
to think i am.
