electronic contracts and consent forms

I often work with usability test participants and freelance clients whom I never meet face to face. I avoid contracts, consent forms, and NDAs whenever possible because it's such a hassle to print and scan/fax them over and over in order to get everyone's signature on them. Is there an easy (for the participant/client, especially) means of signing contracts electronically, one that stands up at least fairly well in court? I've started reading about this, and a lot of what I'm finding has to do with PGP-like key exchanges and signature passwords, neither of which sound like something I could quickly and easily explain to a user or customer. If the signing process is cumbersome, it tends to taint the rest of the experience. Any advice, pointers, or experiences anyone could share? Thank you!
