Use an IMAP mail account.

Move all mail into the IMAP repository with Evolution.

Load up Outlook and download it back again by connecting back to the
same IMAP account.  With all folder structures and read/unread flags set
correctly.

You just need an IMAP account now.  How much email do you have?  I could
make a temp account for you on my private Aus server for the
transfer.....
