The best option is to have a redundant system.  So have more than one
system recording if it is critical.  So if one crashes you can use the
other.

Audacity has been good at handling long recording sessions for me on
multiple platforms.  I can't recall the last time it cashed.

It all depends on what your setup is and what you are trying to record.  As
for crashes I'm with Robin.
