He suggests editing ~/.Xresources and using dconf-editor. It requires a
reboot (restarting X would probably be enough) so I have not tried it.

Is https://help.ubuntu.com/community/Accessibility useful?  Quickly
reading it I can see no information for exactly your problem.

https://help.gnome.org/users/gnome-help/stable/a11y.html has a lot of
information about changing the set-up for the visually impaired but I
can see nothing about mouse size or colour.

It may be that Ubuntu is not the best distribution for your purpose.
Reading what [email protected] says it may be that KDE will work
better for you.
