I use an old POS e-machines desktop box with an AMD Sempron, 512M RAM,
and a $100 Adaptec RAID card.
Runs Ubuntu Server and Samba. It's a cinch to set up.

But if you're looking for distros that do all the heavy lifting for you:

http://www.nexentastor.org/ (community edition is free up to 18TB)

They all have wizbang web interfaces. OpenFiler didn't like my
hardware; FreeNAS did, but I didn't enjoy looking at the web
interface. I haven't tried any of the others.
