Yes, do it now while your walls are open. Unless you plan on piping everything the cost will be minimal. I would probably pull CAT6 at this point and terminate it with the cheaper CAT5e panels and inserts for the time being. The bigger issue is locating and designing your MDF. Make sure it has enough ventilation and power and that the drops do not exceed any distance limitations. When choosing your drops make allowances for future multi-media and VoIP equipment. programming geek, so I'm a bit out of my element here.
