When I run things like this I run a quad cable (2xRG6 quad shielded, 2xcat5e) to a central patch panel. I'd buy the cable yourself and all faceplates get the same termination (1 run of the quad cable). This gives you incredible flexibility and since it's a single cable (all sheathed in a single PVC exterior) it's considerably easier (cheaper) to be run. In general there is no reason (code does not require it) to run LV cables in conduit or gem box. Your electrician SHOULD know this already but in general electricians are not the best at LV setups (and most I have run into hate doing them too).
