Seems you know generally what you're going for..
well, add to the list - dhcpd, dns, NTP etc. if your network gear
doesn't give you that. and of course email related services.

do you currently run exchange server ?
maybe you can consider to buy openxchange.

This sounds nice, so you have the new server and an old server, use them
both! 
But, make sure you calculate the TCO properly, like if your salary is
higher than previous sysadmin, notice that in the calculation, and make
sure that saving on M$ software STILL actually decreaseS the total
cost :) ( because sooner or later ... the customer will notice this)

basically, if you succeed to extract all the emails from the exchange,
the only things users will have to do ( after you reinsert them into the
domain ) - is to maybe change their passwords.

The rest you can do via logon script, and group policy, but ... for
group policy editor, you do need a windoz server.
