If your phone is set up for the Australian region correctly--i.e. you  
bought it through an official channel, or jailbroke it and installed  
Australian region support--phone numbers (and email addresses) should  
show up as hyperlinks in the SMS that you can simply tap, where you  
can then add it to a contact, use it immediately, or whatever you  
like.  If it doesn't work, that's pretty weird.  It definitely works  
for Australian mobile phone numbers, though I can't remember off the  
top of my head whether it works for 8-digit land line numbers without  
an area code prefix.
