Thanks for the responses.  I think most came directly to me and not to  
the whole list, so let me summarize...

What I was hoping is that I could write code in 5 or 6 (e.g., use  
generics) but compile for, say, 1.3.  Based on what I am able to set  
as compiler prefs. in Eclipse, it doesn't look like a possibility.

Let me know if I'm missing something.

And stats on the java version used in browsers is still an open  
question, so let me know if you have anything on that.
