The problem here is that we base the OS version on the Darwin version (why?). macOS11.0 was darwin20.1, and a bump in the minor darwin version always matched a bump in the macOS minor version (darwin20.5 was macOS11.4). macOS11.5 was darwin20.6 as expected. But the newly released macOS11.6 is NOT darwin20.7. Apple kept the underlying layer at darwin20.6. Our script goes KABOOM!
