I am running a dual-boot system with Monterey and Ventura on my M1 machine, with both native arm64 and x86_64 in Rosetta Fink installations in both, and am generally find myself still using Monterey more, as there are packages that have been made to work on the latter, but not on Ventura yet (plus a number that are unsupported on arm64).
