To follow up: yes, a reboot appears to be both necessary and sufficient to
solve the problem.  Oddly enough, the first time I started
gnome-control-center, it couldn't find the settings daemon, but restarting
the control center worked.  And now, I just turned the computer back on
after letting it sit off overnight, and gnucash starts fine and finds the
gnome prefs, so I think we're all good.
