Not the internal logs of the machine that's issuing the output,
perhaps.  But you wrote of this in the context of serial console; logs
kept by whatever the console is connected to will, unless software
specifically filters it out, include them.  My (admittedly limited)
experience is that one of the major benefits of using a serial console
is that it can capture things that *don't* make it to the machine's own
logfiles.

I agree.  I have, depending on which NetBSD rev you're talking about,
from 178 to 899 commits of semi-private patches.  ("Semi-" because
anyone can fetch them but, probably in large part because I don't
advertise them much, few do.)  While none of them are specifically
colouring of console output, plenty of them are similar enough.
