Maybe there's someone from that project here who can fill in the  
details, but I went to a UKUUG (UK Unix Users' Group) session which  
involved a speaker from SEDarwin.  A large part of 'SE' systems is  
Mandatory Access Control, and they compile a Darwin kernel to provide  
MAC to, um, Mac.  IIRC the speaker said that you could run OS X on a  
SEDarwin layer.  So there's one reason for supplying your own kernel :-)

The version of OS X is determined by someone in Apple product  
marketing I expect ;-).
