I don’t know about the particular microphone being discussed but remember that the FT100 requires high level audio, so you will probably need some sort of preamp in the mic for it to work otherwise you’ll have very low audio.
The resistor you need is a 22k from the P1 line with the PTT to ground. Different resistor values on the P1 and P2 lines operate different functions in the radio, such as the Up, Wown and various programmable buttons on the mic, as well as the PTT. Taking the P1 line direct to ground will do absolutely nothing, it must have the 22k for the PTT to work.

I think I can help although I don't have a FT-100 but I have repaired a few some years ago. Double check the radio mic jack. I believe it is a RJ-12 6 pin not a RJ-45 8 pin so you couldn't use an Ethernet cable. If it is 6 pins then a 3 line telephone cable could be used to make an adapter. If you have, or know somebody who has, a RJ crimper you can build the cable yourself.
If possible, I prefer to build adapters vs rewiring a working mic unless I'm certain I'll never use it on another rig. As for the EV-664, it has a 4 pin socket on the bottom so you can make a unique cable for the mic.
As it comes from the factory the mic switch is used to short the mic for on/off use. You need to rewire the switch for PTT as well as VOX, if you plan to use the latter. It is also necessary to wire it for lo-z.
The FT-100 needs a resistor, I forget the value, in series with the PTT line to ground to key the transmitter. That can go in the mic or cable connector. I prefer the latter so that removing the cable from the mic removes the modification.
Regarding shielding, I would use a 3 conductor shielded cable: shield/PTT ground, mic hi, and PTT. Since the FT-100 has a common ground for mic and PTT you don't need more.
I'll work on a schematic. I should be able to send it to you today. I'll include the official EV docs for wiring the mic for PTT and VOX. Its a good idea to use the factory "standard" if you somebody else has to troubleshoot the mic/cable in the future.

I was going through my collection of stuff and found a beautiful old ElectroVoice 664 that I used with my SB400 Heathkit. It would add some much needed charm to the operating desk. Question is what can I use for a mike cable. My thinking is I can whack off one end of an ethernet cable and connect the mike to the cable. Will it work? Would shielding be an issue? Thanks for any feedback (no pun intended, honest).
