All the three points are applicable for a project I use to have in my mind in my college days... Go for implementing Network File Server and introduce encryption in it. So it will be "Encrypted Network File Server". This surely will give you a huge amount of knowledge and exp. in Sockets/RMI.

Go for "Paint Brush". You can also later put that for review in the community. (I made that in my college, so I can help you out in that but preferably offline)

Whatever you feel like, but make some intersesting web application (not portals atleast). Go for Intranet Mailing System...

If you really are a hard working guy and are willing to work, I have got loads of ideas/information that can help you. I can guide you the path but will never pick/hold you on that. :o)
