Having worked with H.323 and related protocols on Linux, I would advise
you against using this protocol to start your foray into RFC based
protocols.

Use RFCs with standalone protocols. How about implementing POP3 or even
IMAPv4? Making an IMAPv4 based server should pose a good challenge!
