Yeah, short answer is don't bother.

Long answer is: yes, it can be done, and it'll cost you a few quid.
There are several little cheap programs for Mac and PC that 
will try to do it -- trace one line of live input into MIDI at least,
maybe a WAV.

The commercial program you are looking for is called
e-Logic and it is probably the only really good one that does:
it's the one most professional studios use. But really, you're
better off learning to write MIDI files...
