What happens if you try to run audacity from the command line, in, say, an xterm. That should show you any errors that audacity is throwing when it fails. It's possible that a dependency was missed for the package, and you need to install it manually for audacity to function. Another thing to look at is whether you have right of access to the audio on the machine.
