Hi Joe,
You are mentioning 2 different subjects but I'm only going to comment on one.
I. too, use Easy Audio Copy (although I also have Exact Audio Copy installed). Even though my background is electronics and software (mostly UNIX), I don't like to mess around with command line instructions any more than I have to. I don't have to with Easy Audio Copy although the ability to do so is still there in the separate file. I have used that to set the flac quality to a higher quality than is the default.
There is nothing wrong with keeping your files in WAV format if you like to do that. As others have mentioned, those files can be pretty big which is why I prefer FLAC files. I actually bought a Fiio X1 digital music player since it isn't too much more expensive than a good MP3 player and it plays FLAC files. I usually just listen to it with headphones but I can hook it up to the car radio using a 3.5mm cable to the radio and setting the radio to AUX input.
As for tagging, I use a program called MP3Tag. But if you are just ripping CDs, you can usually get the full information from the database that EAC uses. That way you don't have to do anything else.

I extract songs exclusively using WAV with easy audio copy. I listen to music either at home on a 30+ year old Yamaha receiver hooked up to a Sony CD player or my automobile and neither can play FLAC files. I’d love to use FLAC but given my many years of listening to WAV and not having FLAC type players for home and car what am I missing here. I am a baby boomer Woodstock gen who does not know how to write command lines for tagging.
