It's a frame buffer that requires no "actual" display or display hardware. http://www.xfree86.org/4.0.1/Xvfb.1.html Given that you won't be using Xmms to actually control Netjuke, this should work well. It's available in a Deb package, a RPM from Redhat, and of course source from Xfree86.org. Have fun.
