Yep, it is hard to really capture all the crazy nuances of real-world scheduling in software. The best you may be able to due is create due-date events immediately before and after the meeting, which can also help in resource reservation since a meeting from 8:00am-10:00am doesn't exactly reserve the room from 8-10, but probably more like 9:45 - 10:15. Sometimes it is also useful to break up "a meeting" into multiple contiguous meetings if in fact the attendance or topics are sectional.
