I suppose you need to use menu: "Project->Edit Day Types" and add a new
day type. The hard part will be to choose a name for this type ;-).
Let's call it 'Maintenance' or 'Working and Maintenance' or 'Working
late'.

Then go to "Project->Manage Calendars", select the calendar in the left
column (if you have created more calendars).
Click the button [Working time...], select the just-created-day-type,
type the hours (8:00 - 17:00 / 18:30 - 19:30, for example) and click
[Apply], then [Close].

Select the day you want to change (February 19, for example) and near
the bottom you will see an option 'Set day type to:'.
Choose the just-created-day-type and click [Apply].
