The offered options of known attachment types isn't Evolution specific,
rather than a Gnome wide setting AFAIK. Thus you got to see your Gnome
MIME type settings (or something like that) to make it work.

Can you open the saved file by double clicking it in Nautilus?

Anyway, Evo 1.2.x is pretty old. I don't know for sure which settings
are responsible for the desired behavior.


Some additional info might be interesting: Is this a plain RH9 Gnome
desktop or did you install Ximian Desktop? Which Gnome version? Did you
get OpenOffice from openoffice.org site or is this a Ximian package?
