I would suggest Asciidoc [1]. It uses a Wiki-like syntax like Markdown,
but has also a couple of more powerful features and an actual
spec/grammar. With Asciidoctor there is also JVM-based tooling
available, using JRuby to run the original asciidoc (which is written in
Ruby).

AFAIK, Github also supports Asciidoc (use .adoc instead of .md), so if
learning to syntaxes bothers you, you won't have to.
