Manually deleting all the contacts in the phone got me closer. After that BitPim's Phone Info button started to show the correct info (instead of being blank).

A transfer at that point still hit an exception though (attached), but with a different error than previously. It said something about "Country".

On a hunch, I went back to the spreadsheet full of my contacts and 

1) cleared all address columns
2) cleared all speed dial columns
3) added "home" or "office" in the emails_type column for each email

I exported that to a new .csv, deleted all the entries in BitPim, and imported the .csv into BitPim.

This time, the transfer to the phone completed without exception, the phone rebooted as expected, and now I have contacts that work!

I don't know which of 1, 2, or 3 made the critical difference. If the developers would like to know I'm willing to try them individually to find out.
