I believe you can just set the bitrate to 256 in grip, and just add the 
-V option that Todd mentioned to the text input for the lame command 
line, along with a number from 0-9 where 0 is the highest quality of VBR 
... Todd uses -V 1 for example.

So your command line might look like "--vbr-new -V 1 -b %b" plus any 
other options.
