Yes, support for DV on Linux is quite good with several choices for
drivers, codecs, and applications. However, none of it is compatible
with Video4Linux.

I do not know much about videolan server and its merits over ffmpeg
server. However, ffmpeg has native support for DV decoding and the
dv1394 driver. Try using ffmpeg with DV:

Coriander is not made for DV cameras! There is another class of 1394
camera called IIDC that is used for both hobbyist webcams and
industrial/scientific very high res cameras. Coriander is for IIDC.
