However you don't need to recompile gnome to be able to tweak things. Menus are actually built based on the files in /etc/gnome-vfs-2.0/vfolders/, bonobo paths are defined in /etc/bonobo-activation/bonobo-activation-config.xml, gconf paths in /etc/gconf/2/path, etc... There's also a bunch of environment variable one can try, but as I don't use that approach myself I can't comment on them.
