I'm sure if a better mechanism for changing MIME types were offered,
GNOME developers would gladly accept it. All Nautilus does is call
functions like gnome_vfs_mime_add_application_to_short_list(); it should
be rather easy to implement an alternative interface if you can think of
a better design.
