You are forgetting that all of these are GUI mail clients.  Text mode mail 
clients do not share the same UI paradigm.

If you have the mail server set to localhost, then in both places you're 
going to send the mail to the local mail server, which can do whatever it 
wants with it.

And, again, I'd be surprised if more than 0.01% mail servers out there falls 
into this category.
