The email address is the one you have defined in ZOË's preferences. The 
authentication for SMTP is the one you have defined in ZOË as well.

You must enable authentication to access ZOË's SMTP server (ditto for 
all the other services).

Hmm... not sure... but I think that the rules are evaluated 
sequentially... to change the ordering, you can simply drag the rules 
to reorder them... the Junk filter is a rule as well... check 
Preferences -> Junk Mail -> Advanced
