Hi Richard. I may well misinterpret your words and think that you mix things up. :-) I would clearly separate the pitch-to-MIDI conversion and the number of output channels. The conversion would benefit from conversion of the sounds of individual strings. If that should be impossible, like when using a single jack in, then the strings should be picked up as characteristically as possible, therefore by avoiding overtones (through selection of the element an by setting the knobs to treble). My reasoning may be wrong, for my Godin uses the "rich" piezo pick-up for its pre-MIDI output. Using one or six MIDI channels for output each have their own use. Think of pitch-bend. Using one channel may be close to using a tremolo handle or playing bottleneck.
