An ssh session being timed out in 5 minutes is broken.  Hard to say if
that's ssh (doubt it) or some unreasonably aggressive firewall.   I
think you should fix that first and then continue with unison issues.

You may wish to look up how to set tcp keepalives for your operating
system, or if ssh has applcatiion-level keepalives.   Surely any
defaults are tuned to be less aggressive than every minute or two, so
even if enabled wouldn't be saving you.
