I've (ab)used github for this: my collaborators can either choose to use the github web UI, or the git cli tools... but it's not "real-time" collaboration, and requires your collaborators to be reasonably technically minded. At work we do a lot of collaborative word processing, and google docs seems to be the best tool for our use anyway. Sad, but.....
